Mi Pollo Es Guapo
This chicken recipe will impress any guest, not to mention your own taste buds. it is truly as DELICIOUS as it is HANDSOME;)
1 whole chicken - free range - antibiotic free (or 6 legs)
Lime juice (from a bottle, don't loose your time juicing real ones)
Mexican oregano. Watch out, it's different from "mediterranean" oregano. Smell is deep, peppery, lemony. It's a must-have if you like mexican food !

Salt and pepper
Cut the chicken into pieces
In a large ziploc bag, make the marinade mixing 2/3 cup of lime juice, 1 tbsp cumin, 1 tbsp paprika, 1tbsp mexican oregano, chile peppers, salt and pepper
Marinate the chicken at least 2 hours
Remove the chicken and grill it on your barbeque (we recommend setting the barbeque between medium and high and cooking for approximately 20 - 25 min)
Make sure you baste the chicken with a brush dipped in the marinade each time you flip it.
Once the chicken is fully cooked and plated add some fresh coriander as garnish before serving.
